Being told by the dealership's shop that the timing chain needs to be changed at 100,000 miles. A salesman says the car is good for 200,000 miles, and, never has seen a chain go out on that model Camry. Yes? No?

I would ask why they feel that the timing chain needs replacement - is there something wrong with it? Otherwise, there is no set replacement interval.
Even looking at the scheduled maintenance guide for your car at http://smg.toyotapartsandservice.com/ , I do not see a timing chain replacement listed at the 100,000 mile/60 month service.
(If your 2002 Camry had the V6 engine, that does have a timing belt rather than a chain, and it should be replaced at the 90,000 mile/72 month service.)

They are trying to take your money. You replace them when they are causing a problem/broken. That being said I have never seen a Toyota with a timing chain problem that was taken car of. Such as- changing your oil!
